Wild Alaska salmon fillets in aluminium foil with mushrooms and leek

 

Ingredients

(recipe for 4 persons)

 

  • 4 Queens Ocean wild MSC salmon fillets
  • 250 grams of mushrooms
  • 100 grams of shii-take
  • 1 leek
  • butter
  • oil
  • 1 glass of white wine
  • thyme
  • pepper and salt
  • aluminium foil
 
Method of preparation
  • Defrost the wild salmon as instructed on the packaging.
  • Dry the wild salmon off with kitchen paper.
  • Brush clean the muchrooms and shii-take and remove the stems from the shii-take.
  • Cut them into quarters.
  • Wash the leek and cut into fine rings.
  • Heat the oil in a frying pan and fry the mushrooms and shii-take golden brown.
  • Finally add the cut leek and fry for a moment and damp down with a glass of white wine.
  • Season with pepper and salt and let if cool off for approx. 15 minutes.
  • Preheat the oven to 180ºC.
  • Season the wild salmon fillets with pepper and salt.
  • Take 4 pieces of aluminium foil and put a salmon fillet on each piece.
  • Cover the wild salmon with the fried mushrooms and leek.
  • Put a twig of thyme on top and fold the aluminium foil into nice packages. Put these into an oven dish.
  • Place the oven dish into the oven for approx. 20-25 minutes.

Serving tip
Serve with nice creamy mashed potatoes mixed with small pieces of bacon.
 
Watch out! Carefully open the aluminium packages as steam may excape.
